Healthy Prawn Pot Noodles

I thought today I'd do something totally different and show you a little recipe how-to on my current favourite lunch! These awesome healthy Prawn Pot Noodles! A few weeks ago I came across this recipe on The Londoner -Rosies Travelling Noodles. They instantly caught my eye and have been my lunch of choice ever since! These pots are quick and easy and perfect for those who want something a little fancier than a store bought sandwich for lunch!

Ingredients

(makes 1 pot)
- Pot with a Lid (I use these Kiln Jars)
- 100g Rice Noodles
- 75g Cooked Prawns
- 1 Handful of Asian Vegtables (I just use stir fry veg)
- 1 Spring onion
- 1 Handful Coriander
- 1tsp Hot sauce
- 1tsp Miso paste
- 1tsp Vegtable Bullion
- 1tsp Thai Paste
- 1tbsp soy sauce

In a small bowl mix together the wet ingredients soy, miso paste, hot sauce and thai paste as well as the bullion powder. This is going to be the base for your soup and give it that lovely asian flavour.

Line the jar with about 100g of cooked noodles. I like to use rice noodles as I prefer to avoid gluten where I can, but almost any noodle will work! Feel free to use whatever noodles you fancy just make sure they are precooked before lining your jar!

Pop in your chosen meat. Im using prawns as I really want to add more seafood into my diet but chicken or tofu would work just as well. Just make sure it's precooked! Then add your soup base mixture

Add your chosen asian vegetables on top as well as a generous handful of fresh coriander and spring onions and clip the lid down! You're done!

Once you're ready to eat all you do is boil a kettle and top the jar up with water. Seal the lid for a few minutes and then chow down!

I work these out to be around 250 calories give or take and they are a super healthy warming, crunchy fresh lunch. If you're eating El Desko then take then they transport really well, just make sure not to add the water until lunch time! Double or triple the ingredients to make enough to last a few days, they keep well in the fridge so are ideal for meal preppers or lazy lunchers!
